Steps to make Ben's Chicken Enchiladas:
  1. Preheat the oven to 350
  2. Cube chicken breast into 1" cubes
  3. Saute over Med Hi heat until no longer pink. Remove from heat
  4. Add onion, mushrooms, peppers, garlic, salt and pepper to saute pan and cook until most liquid has evaporated.
  5. Add chicken and Velveeta cheese. Stir over low heat until cheese is completely melted.
  6. Use butter to grease 9x13 glass casserole dish.
  7. Pour half the can of enchilada sauce in bottom of pan.
  8. Spoon filling evenly into 6 large tortillas.
  9. Add rolled enchiladas and top with remaining enchilada sauce.
  10. Sprinkle with shredded cheese and bake for 30 minutes.
  11. Broil: I like to finish mine in the broiler to darken everything up a little.
  12. Garnish with cilantro and sour cream and serve.
  13. Ready to serve and ENJOY!
